Chatham Islands Crayfish is a huge part of the economy on the Islands.

Since the 1968 crayfish boom, heavy regulations and quota systems have been put in place to keep the crayfish breeding and rejuvenating, Chatham Islands has one of the best regenerative and ethical processes in the world. From a crayfishing family myself, this pays homage to all of the sea dogs on the island chasing this salty gold.
